Fresh Plum Jam
This is a recipe for fresh jam- good for people who don't have the time or stuff to can, and want to eat a lot of jam in a short period- I'm not sure exactly how long this stuff stays fresh, I think no more than a month. If you make extra, it's a great gift for your friends!
Ingredients
- 1-3 cups of suger
- Plums- about 1 liter
- 2 lemons
- Some jars and lids (depending on size, 2-4)
- For the recipe, I start with a lot of plums- about a 1 liter container, filled with them. Wash them, and slice them in half, remove the pits, and then slice that half again- so you get 4 pieces with each plum.
- Have a big pot ready. Put all of your sliced plums in, and add the juice from 2 lemons.
- Next add about a third of a cup of water, or 50 ml. Stir around gently.
- Next add your sugar- I would start with 1 cup, and then add more to taste, perhaps as much as 2 cups.
- Turn the heat on low, and stir. Put a lid on, and check in about 15 minutes.
- Keep an eye on your jam, stirring about every 15 minutes or so, for about an hour. The plums should start to fall apart, and the liquid should be bubbling. Check the consistency and sweetness of your jam- you can add more sugar if you like.

- If you think your jam is done, here is the test. I take a small saucer and pour about a table spoon of the liquid in the middle, and stick it in the freezer for about 5-6 minutes. Take the saucer out, and run your finger through the middle. If the jam does not come together, then it is done. If it does come together, let it cook about 15 minutes more and re-do the test. When it's done, pour it into the jars, and let it cool. Do not put the lids on until in cools, for about an two hours or so. However, if you are going to can your jam, than you obviously have to put the lids on and start canning right away. Otherwise, you can keep your fresh jam in your fridge about a month.
